										<content:encoded><![CDATA[<p>With the new addition of Salted Caramel Cake to our menu, I thought I would share our easy salted caramel recipe. Taken from Nigella Lawson’s recipe, we have adapted this to be the perfect consistency to fill salted caramel cake. It also makes a delicious source when still warm for ice cream and puddings .</p>
<p>No sugar thermometer required! The recipe makes enough caramel to fill a 3 layer 6″ cake.</p>
<p>Put 125 grams of butter, 50 grams of golden syrup, 50 grams of white sugar and 50 grams of light soft brown sugar in a heavy based non stick saucepan. Stir over a low heat until the butter had melted.Turn up the heat to medium. Do not stir now, just swirl the pan around every now and then. When the mixture starts to simmer, allow it to simmer for a further 4 minutes. Take the pan off the heat and add 75 ml of double cream. This must be double cream and do not add more than 75 ml or the caramel filling will be too runny to fill a cake. Stir in up to 1 teaspoon of sea salt. Place the pan back on a medium heat and let it simmer for a further 2 minutes to dissolve the salt and thicken even more.</p>
<p>The sauce is now ready and can be poured over puddings or ice cream. Don’t worry it will be runny at this stage. For a salted caramel cake filling, pour the source into a Pyrex bowl, allow to cool then chill in the fridge overnight to thicken up. Leave for an hour to come back to room temperature before spreading on the cake. This will store for up to a couple of weeks in an airtight tub in the fridge.</p>

										<content:encoded><![CDATA[<p>Naked cakes have become hugely popular as they look fabulous in any type of venue. They are also more budget friendly as there is far less work involved than icing a cake with sugar paste or royal icing.</p>
<p>Naked cakes can be decorated with summer fruits, fresh flowers or both. We supply fresh fruit decoration and will liaise with your florist over fresh flower decoration.</p>
<p>We can trim your cake or leave it un-trimmed, whichever you prefer, examples of which are shown below. We also apply a light or generous dusting of icing sugar and can add buttercream to the top of each tier, the choice is yours.</p>
<p>We make our naked cakes with luxuriously deep tiers, each with 4 layers of sponge and 3 layers of filling.</p>
<p>A 2” difference in width between the tiers creates a narrower cake and a 3” difference a wider cake. Again the choice is yours, but if you would like a lot of decoration we advise that you have the wider shape.</p>
<p>You may choose from any of our flavours except traditional fruit cake. Our sponges are all brushed with fresh syrups to add flavour and keep the cake moist, so there is no worry of the cake drying out whilst on display.</p>
<p>We can deliver, assemble and decorate your naked cake for you. Please contact us if you would like a quote for delivery.</p>

										<content:encoded><![CDATA[<p>Choosing your wedding cake can be one of the most fun parts of planning your wedding. Grooms and mothers- in- law are often eager to be involved, especially when sampling delicious cake. But with such a wide variety of wedding cakes now available, it can be a little daunting knowing how to decide and where to start. The 3 key things to consider are flavour, design and size.</p>
<h4>Flavour</h4>
<p>The flavour of the cake rarely affects the design on the outside, so there is no problem if your dream wedding cake is layers of indulgent, rich chocolate cake with a classic white iced finish. Ideally, arrange with your cake maker which flavours you would like to try prior to the tasting and try as many as possible. They may also be able to make other flavours on request for you. Remember a fabulous tasting cake should always be made with real butter.</p>
<p>Serving your cake as dessert is often a budget friendly option. If you are having a separate dessert however, choose a different flavour for your cake. It is lovely to have at least 2 different flavours to cater for different tastes, or even a different flavour in each tier. Nowadays many wedding cakes are served in the evening, buffet style, when guests may be getting hungry again. If you are inviting extra guests for the evening, a lovely way of involving them is to invite them at a set time for the cake cutting.</p>
<h4>Size</h4>
<p>the number of guests effects the size of your cake to some degree, however if you want a large cake but have fewer guests, there is the great option of adding some false tiers for affect. A tall pedestal stand will also add height and drama to a cake. If your cake budget is not so large, a smaller 3 tier cake with extra cutting cake is more budget friendly than one large decorated cake. Most cake makers allow for finger size portions however you may require larger portions if serving the cake as dessert. Make sure your cake maker knows how you plan to serve the cake.</p>
<h4>Design</h4>
<p>if you would like the design of cake to match the style of the reception, it is advisable to choose the flowers and reception details first. This is very helpful to your cake maker if you are having a bespoke wedding cake design, and do take all these ideas and colour swatches with you to your cake tasting. The design of your cake may focus on your wedding dress details, invitations or reception flowers. Go with your gut instinct on what you like. You may have quite a traditional style wedding but want a themed wedding cake that is very personal to both of you. It is your cake, so don’t be afraid to go against tradition.</p>
<p>Many wedding cake designs incorporate flowers. Sugar flowers are very fashionable right now and are so stunning when expertly crafted. Fresh flowers are beautiful too and if you want a lot of flowers on the cake they are usually a more cost effective option. If you really don’t like icing, you may wish to choose a patisserie style cake; un-iced naked wedding cake or with a butter cream finish. Fresh flowers and fruit work well with these and the buttercream can be coloured to match your colour scheme. When choosing a bespoke design, ask your cake maker to send a sketch of the finished design to you.</p>
<p>Ultimately, your wedding cake should look and taste beautiful and provide a fabulous centrepiece and talking point at your reception.</p>

										<content:encoded><![CDATA[<p>If you are in the process of planning a wedding you are in luck. You have just stumbled across a specialist group known as Hampshire Wedding Experts.<br />
Currently we have a small, yet exceptional group of very talented people offering the very best to potential couples planning their wedding.</p>
<p>It all started back in July 2013 when I received a telephone call from award winning and highly regarded Hampshire photographer, Simon John FBIPP FSWPP. He felt with so many rogue traders popping up everywhere, it was time to bring quality back to the Hampshire wedding scene. With over 30 years experience photographing weddings, Simon brought together some of the best suppliers he had worked with and so Hampshire Wedding Experts was born. The photographer sees every aspect of the wedding day, so who better to form the group!</p>
<p>We now meet regularly at the gorgeous Old House Hotel in Wickham. The hotel is part of our group; a perfect setting for an intimate wedding with fabulous food (believe me I have eaten it), an extensive wine list and beautiful rooms.</p>
<p>Simon John FBIPP FMP, photographer and founder of Hampshire Wedding Experts, has been a professional all his working life with over thirty years experience. He has handled somewhere in the region of 1500 weddings to date. However he still strives for that perfect image every time he picks up the camera. He has won UK wedding photographer of the year, and holds the UK’s highest Accolade of Fellowship. He teaches other professionals and is an author on the subject of wedding photography</p>
<p>Nicki Hill bespoke wedding dresses are in my opinion second to none. Her dresses flow, beautifully balanced with her natural feel of elegance. Timeless, but very “now” at the same time. Nicky can also supply other leading designers and a fabulous range for Mother of the bride.</p>
<p>Jeannette Rawson, This Designer Florist has amassed the highest awards for artistic floristry in the UK and USA. She is a warm approachable lady with great taste. Jeannette is simply passionate about what she can create for her wedding clients, a rare talent indeed.</p>
<p>Elizabeth Dayment has worked at London Fashion week and for an impressive list of celebrities. Liz brings out the natural beauty in everyone she works with. Having a great make up artist is so important to a photographer as this helps controlling the skin softness when lighting for beauty.. Liz achieves this with relaxed ease.</p>
<p>Charlotte Cornelius is just one of the most original jewelers I have ever seen. With a background in art and design she brings to the group originality. When the perfect engagement ring or wedding band is what you are looking for make sure to look at Charlotte’s impressive and original ideas.</p>
<p>Lily Anna Rose wedding stationary is that touch of style every couple so desperately look for to set their day off on the right track. Claire’s enthusiasm is contagious and whether you are looking for vintage, romantic or a modern feel for your day, make sure you speak to this talented lady first.</p>
<p>Thomas Cook A name synonymous with the amazing honeymoon locations available today. Let Mary at Thomas Cook in Fareham tailor the perfect romantic hideaway. A sun drenched terrace, beautiful white sandy beaches, or romantic candlelit dinners are all waiting for you.</p>
<p>Diamond Films By Roger Lowe are visually exciting and beautiful at the same time. Roger is a multi award winning cameraman with an eye for detail.</p>
